A couple of weeks ago I had a huge weight loss because I didn't eat. Totally the wrong way to go about things and I knew it was wrong, but things conspired against me causing me to completely lose my appetite. My relationship with food has never been an easy one but that has generally meant overeating at times of stress. To my complete surprise the opposite has happened this time and I find myself unable to eat. This past week I have eaten more and I really thought things were getting back to normal. How wrong! Today this nauseous feeling is back and I am struggling to eat. I have no appetite and the thought of food makes me feel sick. I have to cook at home, however, so I have gone through the motions, trying to optimise and attempting to eat proper meals. So here is today's offering. None of it is very imaginative but that's as good as it gets I am afraid!
I love spinach and eggs so I was hopeful and I did manage to eat. If you have not tried the combination then you really should. I cook the spinach in the microwave for about 90 seconds but I am just as happy to eat it raw! Any kind of eggs go well but runny yolks are the best!!!!
This salad looks a bit odd and the combination is I guess: melon, beans and baby sweet peppers. It was a good accompaniment to the cold chicken. I also had a mullerlight yoghurt.
I had promised to make beef stir fry this evening so I stuck to my word. It's very quick and easy: beef strips , garlic and ginger fried in Frylight then add Chinese five spice powder and fry until the beef is cooked. Add soy sauce and green pepper slices. I then add steamed broccoli but you could add any veg you like. Then I add water and bring to the boil. I make into a sauce by adding cornflour (remember to syn this according to how much you use). Season to taste and add more soy sauce to your taste. I served it with jasmine rice. I usually serve with a salad too but with little appetite I missed it out though the peppers and broccoli were a third of the plate!
My plan is to have some strawberries in a minute. Not a very exciting day food wise and I confess I am struggling. I must do better tomorrow! Happy Saturday evening folks. I hope you are all enjoying a glass of your favourite tipple or a treat of some kind.
